One thing that I thing would help is to have experience or knowledge of how the rest of the process works in ERP. That way you will be able to know what the accounting is doing in each area.
Otherwise you may focus on one of the most requested areas which could be the BCM module or something else.
If you don't have an accounting background, take accounting courses. This will add to your credibility and knowledge. Learn as much as you can about the standard business processes such as sales, procurement and manufacturing so you can speak intelligently about integration with FI in SAP.
If you can, get some work experience in the accounting field, such as in accounts payable. You usually don't have to have an accounting degree to work in that area.
In general, any practical work experience related to your area will help to distinguish you from others.
